Can we Configure Multiple secondary servers in Database Mirroring ?

I don't believe that is supported, only one destination for Mirroring.. It IS possible for Log Shipping though..

Iam thinking that the DB mirroring is at the database level is 1:1 and for log-shipping is 1:N.

Not with SQL 2005 or SQL 2008 database mirroring. Single principal, single mirror, optional witness. The new Always On Availability Groups in SQL 2012 will allow multiple secondaries (new feature, the old mirroring still exists in SQL 2012)

in mirroring more than one mirror is not possible, if required u can have one witness server.
Whereas, u can create more than one stand by server in log-shipping.
