There are a lot of great books for SQL Server 2000. Among them are:

Microsoft SQL Server 2000 Resource Kit
Inside SQL Server 2000 (Delaney)
Advanced Transact-SQL for SQL Server 2000 (Ben-Gan, Moreau)
Microsoft SQL Server 2000 Performance Tuning Technical Reference (Whalen, Garcia, DeLuca, Thompson)

I'd use Brian's list and add perhaps Admin 911:SQL by Brian Knight

I like Brians list, I would add Professional SQL 2000 by Rob Viera. Havent read Admin 911 book, though I've seen some of the authors other work and he seems competent:-)
