There are a lot of great books, but most of them specialize in one area or another. Some of the big areas that come to mind are T-SQL Development, SSIS and Reporting...and there are many many more to be sure, and subareas within those 🙂 Do you know what type of development interests you most?

You could start with Microsoft® SQL Server® 2008 T-SQL Fundamentals by Itzik Ben-Gan. I have not read this particular offering from Mr. Ben-Gan but have been impressed with most everything I have seen from him, online and in print.
Another great way to get started is by spending time on this site, and other online question and answer forums, to see what others are doing and how real-world problems are solved. Work some of the problems on your own, and ask questions of your own if you get stuck.

Recently I've been getting into the Joes 2 Pros SQL Server series, its a nice collection of small and very well written books.

They are particularly nice because they are essentially "bite-size" books broken down across specific disciplined of SQL Server, good if big books scare you (as they do me) 🙂

I'd like to also nominate the Joes to Pros series. I purchased all 5 books and was quite happy with them.
Also, look at SQL server 2008 bible. This was my favorite book overall for development.
