Note that you can mitigate the downtime by having a warm server, and restore the logs (and fulls) as they're taken.

And make sure your backups are on different PHYSICAL media to the database.
I've lost count of the number of organisations I've seen that partition a large raid array into different drive letters and think that's good enough.
And schedule regular restores... your last backup is only as good as your last restore.

You are right. Need more coffee.
What I have seen is I/O slowing due to backups being run resulting in "blocking" SPIDs.
This is of course on a seriously underpowered system that has a high amount of processes running simultaneously.
