Good Afternoon,
We are currently working on the project layout for implementing NSX from vmware in our environment. We are thinking to help segment out data if we could assign virtual NICS to each individual sql instance that running on a SQL server. Is this feature even available in SQL Server and if so what version and edition would it be available in?
If it's not that's ok as we are also working on a plan in case we need to increase the amount of sql servers in our vmware cluster.

Yes you are able to tell a sql server instance which IP address and ultimately which NIC to listen on. Check books online for more info

I wrote a blog post on this topic, for a different reason.
I hope you find it useful: http://spaghettidba.com/2015/01/29/installing-multiple-default-instances-on-a-single-server/
