So I brought back some yummy foods from New Orleans. I got some crawfish and pork sausage, some gator and pork sausage and a couple gator fillets. This was all frozen so transporting it was pretty simple. My youngest (who is a fairly picky eater) is getting super mad at me because he REALLY wants to try gator. I am going to grind up the gator with some pork belly and render it in bacon fat. Then make some sliders and put them on the smoker.Hungry now, time for a bacon butty.
Gator's ok, it's what you might expect seagull to taste like - similar to chicken but vaguely fishy. Probably closer to frogs legs. The crawfish and pork sausage sounds awesome. I can imagine it working well with Spanish dishes like arroz brut.

I must admit I admire the spirit of you Muricans when it comes to smoking and curing. It's not that common over here, yet - we're still laughing at what you call a pork shoulder.

Low and slow (cooking in a smoker) is the way to go.
Although it has "butt" in it's name it really is the shoulder.
Edit: I need to visit Kansas City and Memphis to experience the good stuff.

Yeah, the pork shoulder is also known as a pork butt. No matter what you call it, it's really good when made properly.
I think you hit the nail on the head when you said that it isn't common yet. Many cultures around the globe have smoking and curing traditions. Like anything, some aren't all that great and some of them rock. America (specifically, the American south) can't claim to have the market cornered on it. A practice that originated out of necessity has turned into an art form - an awesome one at that. π

We call it a shoulder of course π It's an economical cut with good fat content and has muscles running in different directions - they look different and taste different too. I used to buy them as a student - they'd do for a week.

If you go in expecting a culinary delight, then OK, yeah, they're nasty. If you're looking for something you can eat with one hand without wearing 1/2 of it, that at least will fill you up, then they're great!

No sir, I'm in the U.S. (Michigan to be specific). We have a few good BBQ spots locally (Slow's BBQ in Detroit probably has the highest name recognition, Bad Brad's BBQ in the eastern suburbs is pretty good, Union Woodshop in Clarkston is really good) but I need to experience KC and Memphis BBQ.

They were marginally acceptable way back in the college days. They are certainly cheap but any burger that has a super soggy bun because of all the grease is just not good. I know lots of people really enjoy those burgers but I just can't do it. The only time something that sounds good is after a good night of drinking. And I would prefer taco bell to white castles in any case. π

Not sure where in the dirty mitten you reside but have you ever had Bate's in Livonia or Hunter House in Birmingham? My preference is Bate's, they serve up some of the best sliders around - puts White Castle to shame.

So Livonia is a bit of a drive for sliders, Birmingham isn't so bad, might look at going that way with the wife one weekend for lunch...
Your mentioning Union Woodshop has me wanting to go out that way again for lunch. We've been there once, just haven't managed to get back since.
