I know the answer is Yes : for 2005 and 2008
No : Maybe (depending on setup) for SQL 2000
I am looking the a link to a MS doc that states sql 2005 and /or 2008 logins and passwords are encrypted on internal networks.

Both state that the SQL Server 2005 and 2008 by default encrypt the login and password.
I was trying to find a link to a MS / MSDN, an article from Microsoft.
