Are there logging options for Analysis Services to determine when and how long people were connected to a cube, or who processed a cube or changed a schema on a certain date? We had this "mysterious" schema change on one of our servers and my team has narrowed down the guilty party, but I don't know of a way to check that in the logging. Any ideas?

You can log users queries in SSAS, but this will not tell you how long people were connected to any particular cube nor will it detect any schema changes done in your model.
For schema changes you can either look at your source control software (if you use one) to see who uploaded a new model to the server. Another option is to query a special SSAS DMV which lets you see when was the last time an object's schema was changed. However, this will not tell you who changed it.
