What is the advantage of having a witness server in Database mirroring?
Do you need a witness server in order to have an automatic failover process?
What sort of workload overhead results from being a witness server (is it likely to have an impact on the applications on that server)?

If you want automatic failover, you need a witness server. The workload of being a witness is next to nothing. You don't even need a "full" Sql Server version, SQL Express is sufficient.
