I checked the SQL Servers at our ISP and noted that SELECT @@VERSION indicated that only SP2 had been applied.
The ISP say that they get Microsoft prerelease patches and that although SELECT @@VERSION does not indicate that SP3a + hotfix have been applied this is because the prerelease patches don't contain the version information.
They also say this is why Windows Update indicates that there are 30+ critical updates pending on each server.
Frankly this sounded like festering BS or am I wrong?

Yes, I would say they are wrong. The fact that select @@version says SP2 tells you that SQL Server thinks its NOT at SP3. There are specific files that you can check the release date on to verify but if @@version says SP2 then Microsoft will not guarantee you that are at SP3 then.
