I've disabled replication on the publisher, deleted all the publications, unsubscribed all of the subscribers, and run sp_subscription_cleanup on both the publisher and the subscriber, yet I still see a subscription on (what was) the publisher and (what was) the subscriber.
Any suggestions for getting rid of it?

I think you didn't do it in the correct order.
Fist you should delete all the subscriptions to your publicacion, on both server. (In this way you won't have to use sp_subscription_cleanup), then drop the publication and finally disable the distributor.
Are you still having the ptoblem, or have you already resolved it?
