I was wondering if an existing SQL 7.0 database could be replicated to a SQL 2000 server. Also if there are any suggestions or literature that you could provide I would appreciate it.

Should work without a problem. BOL is decent, the replication wizard saves a ton of time compared to figuring it out manually! If you haven't worked with replication before I'd suggest setting up a test server for a few days to practice on. All in all I'd say 20 mins max to set it up if you're familiar with it.

From what I have seen the only known problem is with immediate updating subsribers that you can read about here http://support.microsoft.com/default.aspx?scid=kb;en-us;Q271727. The problem is a design difference.
