I will be installing another instance "Instance_2" of SQL 2000 to test upgrading to SQL2005. I imagine at some point I will want to uninstall "Instance_2" and re-install to start over. Is there any risk to my original instance "Instance_1" when doing an uninstall of "Instance_2" ?? I imagine I just go to Add/Remove programs and be careful to select the right one.

AFAIK to uninstall an instance, you would need to run the SQL install CD and one of the first couple screens will allow you to remove an instance.

You can also just shut the service off and keep another instance for any kind of testing you need to do.
