Evening All,
I am wanting to create diagrams similar to the following:

What would the best software to recreate that be?

another free option is the open source program Dia:
http://dia-installer.de/
I've used it when I didn't have Visio available, or when Visio seemed like overkill for what I needed.

I've used Word and inserted Shapes when I haven't had Visio available. It can be a bit limited at times but that example would be doable with the built-in shapes.
