Inherited a new production server that does a backup every night but only keeps two nights worth of backups. Limited space, no Dev/QA server, non-profit company.
Before they let me run Ola's preferred backup plan and change to a Full backup on Sunday and differentials each day to have a weeks worth of backups they want me to run both plans together.
I could be wrong but is it even possible to have two separate backup plans running at the same time?
Won't the nightly backup kill the second backup plan that is running differentials even if they are using two different backup media sets?

You would have to change one of the plans to perform copy_only backups.
Before switching to a version to implement differentials, are you sure you will be able to get a full week there based on your storage? I have seen differentials grow to the same size as the full within a matter of a couple of days. Active systems can do that and you end up back in the same scenario of not having space to support enough backups.
