i am migrating dbs from 2000 - 2005. Initially we did backup and restore and are now testing the migrated DTS packages. Now it is in testing phase. Once the testing is done we again need to get the latest updates from legacy dbs on to new dbs so this i suggested:
i)have to do backup and restore again for each db
ii)logshipping - did not suggest since the old server has very low configuration and setting up log shipping for each db is not possible
iii)replication - not sure whether it is good idea to use or not
any better ideas please suggest me..thank..

I would only recommend number 1, a backup/restore of the databases post migration testing. I have used backup/restore of a full backup with norecovery, and then log backups/restores to minimize downtimes on VLDB's where necessary with great success.

If u want to automate then select Log Shipping/Mirroring else choose manualy take full backup and restoration..

Option is 1 is very prectical and unless you do have VLDB as mention by Jonathan it's perfect solution.
If your DB is very critical and would like to minimise the down time surely Logshipping is good option but make srue about the fixing users & permissions.

the old server has sql2000 dbs..will log shipping effect the performance of the old server..thanks..

if i do a restore with no recovery...i do not think i can test the SSIS packages..since the db is in recoevery mode..so i will need to restore completely..then later on do a full backup and then again do a full restore..please correct me if i am wrong..thanks..
