why should I do this or how would this work? If I take a single file from a filegroup offline, the data in the file will no longer accessible. And since the data for bigger tables are usually more or less equally distributed (there are exceptions as a recently added file or a 100 % filled file with no autogrowth), I wouldn't be able to run queries on my tables.

Moving a file to new storage, if it's large. Or a restore for file.
You can't run queries, but it can be useful in situations.

Why then does SQL Books Online say
OFFLINE Sets the file offline and makes all objects in the filegroup inaccessible.
Or am I misinterpreting that?
