We are planning to use one of AWS instance for sql server and wanted to know if the instance storage drives can be encrypted for storing PCI and PII data. Coudn't find info on AWS documents.

EBS volumes can be encrypted and TDE is also supported - check the security optimization section in this whitepaper:

It's not EBS volumes. Its NVMe drives attached to instance itself. When we shutdown or stop the instance, all the data on these drives will be lost. I added the link above for more info on instance storage details.
