  I have a text file that contains a list of document paths, would anyone have a script that would run through the list of document paths in the file and copy the files from a remote server to my local drive

  Is this FTP or copy from Windows (SMB)?

  If it's FTP, that's trickier, but either could be done. SSIS can do this, looping through lines in a flie.
