We want to install SharePoint 2016, but aren't sure whether to install it onto 2014 Standard or Enterprise....what limitations are there if you use Standard edition for SharePoint?

If you install SQL Server 2016 then you'd be much better. The Standard is very close to Enterprise. Find them here https://msdn.microsoft.com/en-us/library/cc645993.aspx

What are the server's specs, do you need the Enterprise Edition for any reason?

With the release of SP1 for SQL Server 2016 the differences are even smaller and better for the Standard Edition.

Even if 2016 Standard Edition now supports some of the Enterprise features, that doesn't mean that SharePoint leverages them. The deciding factor should still be which Edition leverages your server's capacity of CPU and memory.

Licenses for what: Standard or Enterprise? Because it's very different in price.
My advice is to start with Standard. If there is realy a need to upgrade later, then it's easy to do that.
