I have attempted an Edition upgrade from MS SQL Server 2012 C0 to MS SQL Server Enteprise on two occassions and in both cases I find that the DB Engine was not upgraded ony the shared components. Any ideas please?

what steps did you take to complete the upgrade?
Is the instance clustered?

The instance is not clustered.
I ran setup and used the maintenance> Edition Upgrade option on installation centre.

In my case we are already past 180 days so I can no longer access the instance to check @@version. Could this be the reason.

Select @@version is the command to give you information about sql server edition that is used. If you cannot even go to the instance have you try restarting the service?

Yes I have tried restarting even the server. I cannot use @@version since when I try to access SSMS I get the error that the evaluation period is over.

I never face something like that. Maybe you should try to do the setup once again, normally it should be upgrade the edition. Good luck!!
