I am documenting my database, and would love to somehow take my Word 2010 tables of metadata, and link them to my database (so that my metadata can be living inside the Word document). Change a column name - no biggy - Word opens up and the update gets applied to the Word doc.
Any such thing exist? Or am I dreaming for this one? I am guessing the idea exists in a much more simple way in my mind that it does in reality.

I am not sure if such a thing exists where all data access and rendering occurs in Word. The closest thing I could come up with that may be workable for you is for you to develop an SSRS report to select and render your metadata as needed, and then you can export that to Word to distribute.

Darn - I was hoping to avoid the sub-systems if I could to do this with, but I guess that makes sense.
It might be old school thinking, but it seems like it would be so easy to just have an ODBC/OLE DB connection to your database that you could then map to any formatted table, and then accommodate the metadata with, but oh well...
