Whenever I try to open Activity Monitor through SSMS on a particular instance, I'm greeted with the message - "Category does not exist."
This happens only on this instance, and for any client.

Do any of the suggested fixes on this thread help?

No, sorry, should've mentioned that. I've seen that thread before, tried everything, same boat.

What is your SP/Patch Level?
What is the OS?
Do you have a central server?
Do you use PBM?

SQL Server 2008 (10.0.1600.22)
Windows Server 2008
This is the central server.
No policy-based management.

are there other servers being managed by this central server that are > SQL Server 2008 RTM? My first recommendation would be to get that server patched.

No, there aren't. I'll patch this server when I get the chance.

What version of SSMS are you using to connect?

That "could" be your problem in that you are using 2008 R2 version of SSMS with 2008 server.

Huh...weird. I'm connecting to another 2008 (non-R2) instance with this same SSMS with no problems. I'll try it specifically with a lower version.

It could also be a permissions issue for your user on that instance?

I'm in the sysadmin role.

I'm in the sysadmin role.
Are you 100% positive that you are set up that way on that server? Not trying to harp, just trying to verify that you checked and didn't trust someone else.

I think it is more related to the Central management server and it being RTM. Let us know how the patching goes.
