For using SSMS to connect to remote databases only, how do the different versions distinguish themselves? For example, if I use Express on my laptop, will I be left with few tools that Enterprise would have when connecting to back end SQL databases?
Let's assume the back end databases use SQL Server 2008 Enterprise. I know hosting databases would be different between different versions. But I want to know about using the remote connection tool of SSMS and how it differs between the different versions.

If you only install Express you'll be missing server management tools like Profiler. Here is a good rundown:

If I needed Express database engine on a laptop and a full set of tools to manage remote Enterprise or Standard editions, I'd install Management Tools/Complete from the Enterprise\Standard edition first, then database engine from the Express install files.
