I installed a sql server 2008 cluster, first node went fine, however the 2nd node install fails with the following
installing failover node sql server 2008 This resource does not have all the nodes of the cluster listed as 'Possible Owners'. The group that this resource is a member of will not be able to come online on any node that is not listed as a 'Possible Owner'.
ANyone seen this before?

Not this particular behavior but where you might try and fix it I can help with.
Open the Failover Cluster Management app, connect to the cluster.
Expand "Services and Applications"
Click on the Resource Group Containing the SQL Server you are trying to add the node to.
Right Click on SQL Server (instancename) at the bottom of the list. Chose Properties.
Goto the Advanced Policies tab. What servers are checked? What servers exist?

I have 2 of these clusters on one that worked yesterday, there are 2, only 1 of the nodes (the one that the original install of the cluster was done), the node I am trying to add does not show up

I wasn't sure but I didn't think that the other node was added to that tab until after the install anyway..
Are both nodes either set or un-set and preferred nodes for that resource group?
I'm referring to one of my clusters for guidance but not seeing much..

Have you ensured that all required storage has been presented to the new node
