I notice that many job postings are looking for 2008 experience, but our company won't go to 2008 right now. If I install a dev copy of 2008, what areas do you think I should look at and become familiar with that are not in 2005, or are significantly different ?

As far I've read from the forums they aren't significantly different. (most was modified between 2000 & 2005). Check on the new features of 2008. (policy based management?, new types of mirroring?, new ways of monitoring...)

My advice is take control of your career!
One tool that can help is a TechNet subscription from Microsoft. This allows you to use all the MS operating systems and server products (e.g. SQL Server, Sharepoint, etc) and Office. It costs about GBP 200 per year (more in year 1) and breaks your skills free from your employer's upgrade cycle.
Without having a TechNet subscription and spending time learning new stuff, I would not have got my current job as Database Architect after spending a few years as DBA lead.

The Geospatial features in 2008 (and 2008R2) are very cool and have the potential to become an in-demand skill set.
