Any problem in using SSMS 2008 exclusively to administer sql 2005 databases (including updating maintenance plans)??

I would not update maintenance plans, that belong to a 2005 instance, from SSMS 2008. An upgrade to the maintenance plan may be attempted. Otherwise, I use SSMS 2008 to administer my 2005 and 2000 instances.

FWIW - I have not yet had any problems modifying maintenance plans on my 2005 instances with the 2008 client tools. Not to say I won't in the future - but as of now I have not had any problems.
Do be aware that you cannot modify maintenance plans on pre-SP2 instances with post-SP2 client tools, regardless of whether or not you are using the 2005 or 2008 client tools.
Where you will find the most trouble using 2008 tools is connecting to SSRS or SSIS (doesn't work). You also cannot use the 2008 tools to edit or create SSRS/SSIS projects and deploy them to 2005 systems.

All of our sql 2005 instances are at SP3 and the one 2008 is at SP1
