Are there any tools out there that will analyze stored procedures, triggers, and functions to determine if they will behave the exact same way after upgrading to 2008 (or 2005 compatibility mode)?

The upgrade advisor. Free download from MS. It probably won't pick up all the issues, but most.
You'll still need to do careful testing...

There's the SQL Server Upgrade Advisor, a free download from MS: http://www.microsoft.com/downloads/details.aspx?familyid=F5A6C5E9-4CD9-4E42-A21C-7291E7F0F852&displaylang=en. It will explain things that need to be changed before or after upgrading.
