Hi Folks
i am just starting to look into SQL Server 2008 even though I have not mastered SQL Server 2005, so my first question is: is there a way to copy over my Maintenance Plans from my SQL Server 2005 server to my SQL Server 2008 server ?

If its an upgrade, it will come up in the upgrade plan and the maintenance plans will be upgraded too.

Did you try exporting SSIS packages by connecting to Integration Services on SSMS to file? and do import on the destination server from the file.

Connect to Integration Services using SSMS. In the Object Explorer, expand Stored Packages. The plans are stored under msdb/maintenance plans. Right-click on each package there are choose Export.
