You can know all about BI from Microsoft Online Books for SQL Server.

It has all about BI, WebCasts, Dev Materials, etc for your reference.
One can use the book Delivering Business Intelligence with Microsoft SQL Server 2005 By Brian Larson.

This is a huge subject and there isn't necessarily an easy book that covers all this. I know that there are a few good SSAS books from WROX (beginning and advanced) that can help. But there's more to BI than SSAS. front ends, warehousing, etc.
Pick one up from the beginner series, like this one (http://www.amazon.com/gp/product/0470247983?ie=UTF8&tag=dkranchnet&linkCode=as2&camp=1789&creative=390957&creativeASIN=0470247983) and see where that leads you.

As previous poster has mentioned. I would suggest WROX books. I like to use them for 2005 and 2008.
