Ok, I got put in charge of putting together our new server infrastructure. I am totally unqualified to do so, I've never even built a computer before. Anyway, I believe our web server and database server each have 4 xeon 32 bit processors.... going to system info it dumps this:

I think we should move to 64 bit as I heard that it allows a lot more addressable memory. We need to support a lot of users and I think we will have a lot cached on our web server.
We will probably need to have a SAN setup. Server hot swap capability. Anyway, I need to get stuff to get us started and then we can scale up and out from their as we grow.
Right now I am looking at Intel processors for the web server and database server.
I also have a question about 64bit...will the web applications need to be modified to run on the servers? What will switching to 64 bit affect?

How about starting with what your intended use for the system is?
