I just start on a new company with 10 SQL Servers and they're asking me to do a
performance on all servers.
what's the best way to do that?

Agree with rqR'us.
There is no one procedure to analyse the database/server performance.
There are many area's which you would need to investigate. Your question is a bit too open. I would suggest reading through the links provided and them coming back with questions on specific areas of server or query tuning.

This is just a comment. The first thing to do is reading your company service level agreement. This agreement should contains lower limit to acceptable perfomance. If the system already beyond this limit than no performance tunning should be done.
