What are some good web sites or books that would provide basic and simple definitions on terms like Data Warehouse, Data Mart and OLAP. And describes why you would use one verses the other. Thanks in advance.

SAS has a good glossary at http://support.sas.com/rnd/warehousing/glossary.html (althought their dw software stinks!) The Data Warehouse Toolkit by Kimball is good reading.
And there are some great tutorials for Analysis Services at database journal http://www.databasejournal.com/features/mssql/article.php/1429671
But don't confuse the terms as a one versus the other. Many terms such as Data Mart and OLAP are simply pieces of the DW puzzle.

The Data Warehouse Toolkit Second Edition by Ralph Kimball ISBN 0-471-20024-7
The Data Warehouse Lifecycle Toolkit by Ralph Kimball ISBN 0-471-25547-5
All of these sources offer technology agnostic DW knowledge. Once you get the overview you'll need to dig into material that supports your specific tools (e.g. SQL Server DTS for ETL or Crystal Analysis for Presentation).
