Hey,
Quick question...
We currently run SQL Server 7. We are installing SQL 2000 on a fresh server and will be restoring the SQL7 Databases to the new server.
What Collation options should I choose? Stick with the default settings (I normally would) or choose compatibility with SQL7 databases?

I think the defaults work fine. You can easily change collation (well, as easily as it can ever be) in SQL2K, dont have to worry about a server wide setting being wrong.

Unless you plan to move right back to 7 then don't worry with the compatibility.
