I'm in the process setting up a new SQL Server 2000 database.
I understand that if you want SQL server to use more than 2GB of RAM, you need the Enterprise Edition. My question is, if there is 4 GB of system RAM, can SQL Server 2000 Standard Edition use a full 2GB, and the remaining 2 GB would be used for the OS and other apps? Or would it only use up to 2 GB after what the OS and other apps are using (as though there was only 2GB in the system)?
Other than the issue of RAM, we really don't need any of the features of Enterprise Edition.

I think you can use the /3GB to make 3G available, of which SQL can use a max of 2, leaving 1g for other stuff.

I think that depends on what OS you are running. As I've understood it, the /3GB switch is not available on Windows 2000 Server, only on NT4 Ent and Windows 2000 Advanced Server (and Datacenter, but who's running that...)
Apart from the possible /3GB switch, the answer to your question is that the OS will use 2 GB, and SQL + other apps will have to share the other 2 GB.
