Hello All,
A very Happy New Year 2012 to all of you...
My question is, does SQL keeps track of emails sent using xp_sendmail, like a sent folder in Outlook.

Pretty sure that answer is no. I only see a log of events, but not very useful.

It might be in the mailbox for the account that is sending the email. That would be the account used in the profile for SQL Server 2005 and up or the account used for starting Outlook on SQL Server 2000.
