We have several of our database files located on mount points e.g. K:\split_data\cm_data\datafile01.ndf
If we change our disk environment, removing mount points but have the exact same folder structure /path to the data files should we expect the database to come back online?

if path is exactly the same like going from...
K:\split_data\cm_data\datafile01.ndf
to
K:\split_data\cm_data\datafile01.ndf
...then the answer is yes.
