2nd vote for SQL Server Internals. Excellent book.
A secondary choice would be Christian Bolton, et al, SQL SErver 2008 Internals and Troubleshooting. It's not as thorough as Kalen's book regarding internals, but it's a very good reference.

Chapter 5 Tables: Internal Storage, page 254 Data Pages, page 256 Examining Data Pages, all the pages before & after, it's all about how data is stored in SQL Server. It's a fantastic book. It covers what you need, in great detail.
The other book I recommended, Chapter 4: Working with Storage.
