I would recommend "Microsoft SQL Server 2005 Unleashed". Any of the unleashed books I have read are very good. It will give you in depth knowledge of SQL Server. It's a good book if you are serious about learning the insides of the product. http://www.amazon.com/Microsoft-SQL-Server-2005-Unleashed/dp/0672328240

Hey don't forget the Exceptional DBA book by Brad McGeehee http://www.sqlservercentral.com/articles/Editorial/62696/ which is a good one to learn from experience!
A few of them = http://www.simple-talk.com/community/blogs/brad_mcgehee/70282.aspx too.
