Got Reporting Services setup but I'm hitting a road block with subscriptions. When I add a New Subscription via Email the "To:" field is grayed out. Right now its just grabbing the user name and not the email address. How do I get permission to change this field?

Have you specified an smtp server? I don't know if there is a way to change it using the GUI, but I know that there is a .config xml file where you can add it. It's something like reportconfig.config or reportconfig.xml. I'm not at work right now so I can't tell for sure:)

Yes you are right, after digging in Technet I found exactly what I was looking for.
