I've verified the logs and the logs seem to show that it does back them up. There are mltiple databases within this plan, and it appears all of them show up. Any ideas are well appreciated, this is not the only SQL server I have this issue with.
I am running only SP3 and not SP4. Besides that i'm not sure what this could be. Please let me know.

What do you see in the SQL Server log at the time the backup failed? How about the job history details? Right-click on the job in Enterprise Manager and select "view job history".

And when you select View Job History, the next part is to check the box.."Show Job Steps". That way you can see the exact step that failed.
Quick guess.......you are probably doing tlog backups of the system databases. You cannot do tlog backups of any database that are in SIMPLE mode. And no matter what, you can not do log backups of the Master database (per the BOL)
